Dorbolò Gubana Boutique

The ancient town of Cividale, now a Unesco World Heritage site, is just one of the many jewels for which the Friuli region is famous. In the historic Largo Boiani, with its view of the cathedral and town hall, Visual Display – an architecture studio specialised in interior design, with an extensive portfolio in retail and hospitality – has created a fascinating Middle European patisserie featuring a space characterised by the alchemy of technical solutions and immersive experiences.

The gubana, after which the Dorbolò family patisserie/bakery is named, is a local pastry filled with walnuts and raisins, which by tradition is dunked in Slivovitz, the Serbian plum grappa - a testament to the cultural mix typical of border cuisine.

For the Dorbolò Gubana Boutique, Visual Display has created an innovative design concept, a boutique with an austere and yet rich elegance, leveraging the transparency and simplicity of its materials. “The concept is that of a theatrical setting,” says architect Stefania Fumagalli, “with an intriguing optical effect of shaped stage curtains which draws the gaze towards the back wall with its counter and large brass logo.” 
The choice of wall covering materials has never been more important. Carácter stone-effect porcelain stoneware, used both on the floors and on the display counters and worktops, embodies the austere look of local stone with its Mix Multicolor finish. The material stands out not only for its unique surface which combines pebbles and stones, but also because of its use of two highly innovative technologies: Puro Marazzi Antibacterial which, with silver ions embedded into the surface during production, eliminates up to 99.9% of bacteria and noxious organisms, and StepWise, which combines an anti-slip finish with a soft, easy to clean surface.

The layout employs other elements to create an attractive mise-en-scène: the overall minimalism and recurring geometries are softened by the arch substructure and luxurious arched ceiling supporting the large custom-made brass and opalesque glass chandelier, while the pastries are arranged in the glass displays like jewels. “The display shelves are mounted between hazelnut coloured dividers, along with little cabinets and cosy alcoves where clients can enjoy their coffee and cake. Bread also has an important role to play, with the bakery corner display showcasing fresh products at the entrance to the boutique.”
